Fresh from the orchard apples...ahhh Fall!

An Apple a Day....Is Not Enough for This Recipe

But 3 cups of apples should do it!

Fall is in full swing around here… The days get shorter, a harvest moon fills the sky, and the once green leaves present their colorful display.

Fall is also the best time for apple picking. Prime apple picking season usually falls within the months of September and October, so get out there grab a half-peck of apples and try this award-winning apple cake recipe. (Really, my family won an award at a local baking contest in Cadillac, Michigan!) 😊

WHAT YOU'LL NEED:

  • 1 1/4 cups sugar, divided
  • 1/2 cup Maple syrup
  • 1/2 cup (1 stick) butter
  • 1 teaspoon vanilla
  • 6 oz cream cheese, softened
  • 2 large eggs
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 3 cups peeled and chopped apples Paula Reds or Macintosh (or experiment with your favorite variety of apple)

DIRECTIONS:

  1. Preheat oven to 350 degrees. Spray a 8 to 9 inch springform pan with a non-stick cooking spray
  2. Beat sugar, maple syrup, butter, vanilla, and cream cheese at medium speed on electric mixer until well combined.
  3. Add eggs one at a time. Combine flour, baking powder and salt. Add flour mixture to creamed mixture, beating at low speed until blended.
  4. Combine 1/4 cup sugar with the cinnamon and cardamom. Mix 2 tablespoons of the sugar-spices with the apples and stir them into the batter.
  5. Pour batter into pan and sprinkle with remaining sugar mixture.
  6. Bake at 350 degrees for 1 hour and 15 minutes. Cool on wire rack.
  7. Enjoy! 😋
